I firmly believe every person should have an “Oh my God, I can’t even” stash of recipes. Easy, fast recipes to pull from your mental Rolodex when you’re exhausted or sick or you already baked the frozen pizza last night, now what are you supposed to do?

A not-small part of my life is spent thinking about these recipes — about accessible, healthy-ish ways to get food into my body when it feels like a massive chore.

Enter the easiest wonton soup recipe, made with five ingredients or less in under 10 minutes.

Be warned that this is not an authentic wonton soup recipe. If you have the time, energy and desire to make your own stock and wontons, might I point you toward these recipes, and please save me a bowl.

But this is easy, delicious, filling wonton soup made with ingredients that are probably already in your fridge and freezer.

Easiest Wonton Soup

Serves 1 (double, quadruple, etc for a family)

  • 12 ounces / 1.5 cups broth or stock, any kind. I like a bone broth if I have it or a mix of miso and chicken or vegetable Better than Bullion.
  • 6-8 frozen wontons (I used Bibigo chicken & cilantro mini wontons from Costco)
  • A handful of fresh or frozen vegetables in bite-sized pieces, such as peas, chopped leafy greens like bok choy, diced green onions, etc.
  • Soy sauce and toasted sesame oil, to taste.

Directions:

Place a small pot over medium-high heat and bring the stock to a simmer. Alternatively, heat it to steaming in the microwave. If using hardy fresh vegetables like celery or carrots, add them as your broth heats.

Once the stock is simmering, add the frozen wontons and frozen or more delicate vegetables and bring back to a simmer.

Cook until the wontons are heated through but not falling apart, according to package instructions or about about 2-5 minutes, depending on how big they are.

Taste the broth. If it needs more seasoning, add a splash of soy sauce. Serve and enjoy.
